What is kombucha?

Fermented tea

Kombucha is an ancient fermented tea based beverage that has a natural effervescence (bubbly carbonation) that is full of probiotics, antioxidants, B vitamins and much more.

Kombucha has been revered as a healing tonic for at least 3,000 years.  It is believed to provide healthy micronutrients and bacteria beneficial to digestion, detoxification and immunity.  Worldwide, people drink kombucha for the way it makes them feel, alive, healed and replenished.

The ingredients are usually tea, water, sugar and a SCOBY (a fermenting culture that is made from previous batches that stands for symbiotic colony of bacteria and yeast). EJ’s Spicy Kombucha is made from a combination of green and black tea with ginger, cloves, cinnamon, black pepper and sugar – it has a distinctive Chai taste.

Kombucha is known for being a great source of probiotics (healthy bacteria) for the intestines, with loads of vitamins, and detoxification properties to cleanse the body and support a healthy immune system. It has less than one third of the caffeine of the equivalent of normal tea due to the activity of the SCOBY.  Kombucha is fed, not sweetened, with domestically sourced sugar, which is quickly metabolized by the hungry micro-organisms living in the brew.  Kombucha is therefore very low in calories..
